They didn't (IMO) 'cook'
The Italian guitar player did good but was
constrained by the frets (and tuning) of his
guitar.
The Indian had to constrain his scales to fit
the 'European' model.
This is a 'peeve' with me.
There are alternate tuning systems (beyond 'equal tempered') that produce aestetics to the max.
But they are being lost !
The only type of guitar that can rise to sitar
must be tuned away from standard, or fretless,
(I.E. a 'Hawaiian' guitar) ........ mike (IMHO)

SO FAR -WOW!-I've followed John McGlauglin from the very beginning-into Shakti.Tho I dont recall him playing with a sitarist. This is a little reminiscent of Shakti.
It sounds pretty "cookin" in spots to me.
One thing I will say is due to its complex sonic nature the sitar doesn't stand out in the mix as much as the guitar.I think that may have to do with the drone strings creating a washy reverb effect[which is great on it's own].
An album I still have from long ago is Yeuhudi Menuin with Ravi Shankar-I suppose a sitarist must adjust his micro-tonal bends.But even traditional sitar music still sounds western tuning to me[maybe because I'm used to blues bending?]
I may buy it-altho I dont have much chance to listen to stuff these days.

Hmm ..... Yea I may be lumping Indian with some other tuning (far eastern or one of the Japanese systems). On another thread someone submitted a 'classical Chinese' piece, and it sounded western to me. I keep listening for that sort of short half-step as in North African stuff.

I've heard his work and he's a superb guitar player doing a lot of types of ragas with his custom guitars which is actually designed in a similar manner like a sitar, having drone, sympathetic, and melody strings.
