Have they bred some cattle and pigs without kidneys? Local Tescos only stock lambs kidneys, my local butcher only gets them to order, I have to go about 9 miles out into the sticks for a butcher that actually has some in stock!
How is one supposed to make a decent steak and kidney stew, casserole, "snake and pygmy" pie or "Kate and Sidney" pudding without ox kidney? Pigs kidney just doesn't taste quite right and lambs kidney is a complete waste of time for those dishes (and others).
If the animals still have 2 each, where are they all going?
