If so why don't they appear in Tescos, (is it the same in other supermarkets?) there doesn't appear to be much pigs liver there either these days.
Have they started to breed animals without them? Even some butchers only get them in to order. Lamb's diddleys and liver no problem (except for bland taste), but ask for ox liver and they look at you as if you're daft, steak and kidney, (AKA Snake and pygmy or Kate and Sidney) does not taste the same with lambs or pigs kidney, I've even read the label on a steak and kidney pie which admits to pigs kidney - sacrilege I say!! I think it could be another influence from over the pond, judging by the reaction from a stateside niece when it was mentioned.
Stir fried pigs liver and kidney with onions - lovely - and cooks quicker in a wok than in pieces in an ordinary frying pan, goes nice with egg and peas fried rice. (I must try the recipe I have for sweet 'n sour kidney, make a change from pork or chicken)
